The Flank Steak comes from the bottom plate portion, and is a long flat strip steak. Slightly different in flavor and tenderness from the Hanger Steak, yet more flavorful and tender than the Skirt Steak. It takes well to marinades and is best flash cooked to rare or medium rare. Bavette is French for Flank Steak.
